A top 'o the mornin' to y'all! Yeah, I'm a bit over the moon this morning. It's an absolutely beautiful spring morning on this the first real day of our retirement (the weekend just seemed like any other busy weekend)!
I started this day by making a double batch of these great 'pancakes' that Rich's sister had given me the recipe for a while back. They are great frozen and reheated, so will travel well. Mar has them with a bit of syrup like regular pancakes while I prefer them plain alongside either bacon or sausage. I think Rich will like a bit of salsa on them. They are very versatile, tasty, and healthy too!
Speaking of bacon, and I'm sure I was, Saturday morning I baked 2 pounds of bacon. I got this tip from my brother, Tom. Line a rimmed baking sheet with foil; lay the strips of bacon on the foil; bake at 375° or 400° for 15 to 20 minutes until the crispness you prefer. Drain on paper towels.
Are you thinking we ate all that bacon? Ha! It freezes really well too and both are in my freezer awaiting their transfer to the RV last thing on Wednesday morning. We'll have some great breakfasts on the road.

Easy Cottage Cheese Pancakes
1 1/2 C. cottage cheese
1/2 tsp. salt
1/2 C. flour
In bowl beat eggs then add other ingredients. If using blender or kitchen aid add ingredients in order.
Don't over mix. Heat greased skillet ( I used cooking spray on a large griddle) and turn when each side browns. Don't worry too much about over or under cooking the pancake, you can tell when they're done just like an average pancake. ~ Makes about twelve 4 1/2” to 5” pancakes.
And after making the pancakes and starting laundry, I had a nice long chat with my next-door BFF Sandee; now that's the way to start a day!
Uh... Thought I left a comment earlier, but I guess it didn't work. Anyway... Hope you have a great time on your first retirement trip. Laugh at the chickens running around Key West, search for the Key Deer on Big Key, don't miss the Everglades, Anhinga trail is neat and pretty short, check out the pontoon tours in the Everglades, but don't get carried off by the mosquitos. =) All stuff we enjoyed while we were there.
